Look no further for super simple yet delicious meal!  I have Beyond Meat Sliders to share with you.  I feel like a broken record when I talk about plant-based recipes…. they aren’t all the bad, they do have flavor, they have good texture, blah blah blah.  Basically, I’m saying don’t knock it until you try it!  These sliders were incredibly flavorful – like more flavorful than a traditional beef patty, plus they were tender, juicy, and seasoned perfectly. As we get into spring and warmer weather, I like to make lighter dishes and meals that are seasonal and have fresh ingredients.  I recently saw a picture of a sandwich on Instagram and immediately wanted to recreate it.  It’s a little salty, a little sweet, creamy, and crisp all wrapped in a baguette.  It’s a Grilled Peach Sandwich with Prosciutto and Arugula and it’s what dreams are made of.  And it’s the right time of year because peaches are going to start being in season and available at your local Festival Foods. I recently saw a Tik Tok of someone making Chicken Parmesan Sliders and knew I had to try to recreate them myself.  Upon watching the (short) video again, I realized they were BUFFALO Chicken Parmesan Sliders, and I was all in.  Anytime buffalo chicken is involved I’m game.  It’s one of my favorite things to eat and I love sampling different variations. These sliders are essentially little Chicken Parm sandwiches with a bit of heat from the buffalo sauce.  They are incredibly easy to make and are packed with flavor. The recipe can be found here. Chicken Bacon Ranch Gnocchi is super yummy and the ultimate comfort food!  CBR for short, is another one of my favorite flavor combinations, and when paired with gnocchi?  Even better yet!  The gnocchi are fluffy and pillowy, the chicken is tender and moist, the bacon is salty and crisp, and the burst of ranch brings it together in each bite.  It’s a quick and easy weeknight meal your whole family will love. Living in MN, I think there is a short window of time to use your smoker for “hearty” meals.  You can use it year-round for various kinds of meats or perhaps vegetables, but if you are making something traditionally enjoyed during winter months or that is much more filling, you don’t have much time.  That is why I took advantage of the mild winter and slightly warmer than usual temperatures lately to make a batch of Smoked Chili with Ground Beef.  I chose this time of year for a couple of reasons.  1) winter is too cold for me to want to smoke food and I would spend too much time trying to keep the temperature consistent, and 2) I wanted to make something hearty that could be enjoyed while it was still cold out.  That’s why this time of year was perfect (for me).  The smoker was able to … Continue reading

Loaded Baked Potato Skillet is a bit of a copycat recipe.  We had something similar at a local restaurant and knew we had to recreate it at home.  It’s such a wonderful side dish or can be used as a full meal if you want to fill up on only potatoes, which is entirely what we did 😊 The skillet is quite literally loaded with tender potatoes that are topped with a cheese sauce, shredded cheese (because you can’t have enough cheese), crumbled bacon, sour cream, and chives.  It’s a typical loaded potato but pre-chopped, cooked in a skillet, and large enough to share.  I highly suggest you give it a try! Homemade Peanut Butter Cups are what dreams are made of.  I’ve made these multiple times, and each time is harder and harder to not eat the entire batch myself!  If you love Reese’s Peanut Butter Cups, you are going to want to try these.  Personally, I think they are better than the store-bought version.  They are rich and creamy, perfectly sweet, and super easy to make.  And they are healthy-ish 😊 An absolute crowd pleaser when you are looking for a light dessert or something sweet to share.  They WILL disappear quickly.  I brought some to a potluck at work, ended up sharing the recipe, multiple people told me they made them for their families, and planned to make them again.  So that’s what I’m hoping to accomplish when I share the recipe with you today!
