I recently saw a Tik Tok of someone making Chicken Parmesan Sliders and knew I had to try to recreate them myself.  Upon watching the (short) video again, I realized they were BUFFALO Chicken Parmesan Sliders, and I was all in.  Anytime buffalo chicken is involved I’m game.  It’s one of my favorite things to eat and I love sampling different variations. These sliders are essentially little Chicken Parm sandwiches with a bit of heat from the buffalo sauce.  They are incredibly easy to make and are packed with flavor. The recipe can be found here. Start by preheating the oven to 400 degrees F and line a baking sheet with parchment paper.  Yes, you are going to make these on a baking sheet vs a 9×13 baking dish.  Line 18 chicken nuggets on the baking sheet and bake according to packaging instructions, until warmed through and crispy. Use a … Continue reading

Pan Fried Chicken with Gravy is such a classic dish.  It’s easy to make, tasty, and doesn’t require a lot of ingredients.  Some might call it a pantry meal because you probably have most ingredients on hand already.  With this recipe, you’ll find tender, juicy chicken that’s topped with a very basic (but very creamy and flavorful) gravy. The recipe can be found here. Start by seasoning both sides of the chicken with salt, pepper, and garlic powder.  I’m partial to boneless skinless chicken but you can use thighs, or another cut if you prefer.  Heat oil in a large skillet over medium heat.  Add the chicken and cook on each side for 4-5 minutes then transfer to a plate.  The chicken will NOT be cooked through at this point but will continue to cook in a later step. Add the butter to the skillet and melt over medium high … Continue reading

Have you ever had a shot of Fireball Whiskey?  It’s like drinking Red Hots.  It’s burns a little going down, it’s very cinnamon-y, and warms you very quickly.  But when paired with chicken wings, it’s a completely different flavor!  Fireball Glazed Chicken Wings are my latest creation.  The chicken wings are moist, tender and have a wonderfully sweet yet spicy flavor.  The chicken is marinated overnight, then baked, and finished off with a Fireball Whiskey glaze.  The glaze is where the flavor comes into play.  There is a slight hint of cinnamon but it’s not overpowering, red pepper flakes to kick the heat up a notch, and brown sugar to level it all out.  They are phenomenal! The recipe can be found here. Start by preparing the marinade for the chicken.  Add the brown sugar, salt, chili powder, black pepper, garlic powder, paprika, cinnamon, and red pepper flakes to a … Continue reading

Air Fryer Hot Pepper Lemon Skewers are a quick and easy weeknight meal with great chicken wing flavor.  Think tender, juicy chicken that falls off the skewer and a homemade sauce that’s tangy, zesty, a little spicy, and delicious.  They come together in less than 30 minutes and are something the whole family will love.  You will have requests to make these again and again.  Perfect for a weeknight meal, make ahead lunch to bring to work throughout the week, an appetizer, or shareable dish to bring to a potluck.  We like to enjoy the skewers as is, but they would pair well with rice, some steamed veggies, or perhaps a salad. The recipe can be found here. Start by soaking the skewers for at least 30 minutes to prevent the meat from sticking to the wood.  I try to soak my skewers before leaving for work in the AM … Continue reading

I love all things Buffalo Chicken.  If you can “buffalo chicken” a recipe, I’ve probably done it, and if I haven’t, I want to know what I’m missing.  My new favorite recipe is for Buffalo Chicken Lasagna.  It’s loaded with buffalo wing sauce, tender rotisserie chicken, plenty of cheese, and soft noodles.  It’s got some heat but isn’t too spicy in my opinion.  If it is too spicy for you, cut the heat with some blue cheese or ranch dressing.  It’s an easy recipe to prepare and comes together, start to finish, in about 1 hour. The recipe can be found here. Start by preheating the oven to 375 degrees F and spray a 9×13 baking dish with cooking spray. Add the ricotta, 8 oz shredded mozzarella (or sub with blue cheese), egg, parsley, salt, and pepper to a mixing bowl and mix until well combined.  This is the yummy cheesy filling. Add the chicken, buffalo sauce … Continue reading

Chicken Meatballs with Homemade Spinach Alfredo Sauce is a hearty and rich meal your whole family will love!  The homemade sauce is deliciously creamy and is paired with crispy, salty bacon, tender, cooked spinach, and flavorful chicken meatballs.  The chicken absorbs some of the sauce and flavors while simmering making them super moist.  It’s a savory dish you won’t want to miss out on trying! The recipe can be found here. Start by making the meatballs.  Preheat the oven to 400 degrees F and line a baking sheet with parchment paper. Combine the breadcrumbs and milk in a large bowl and set aside.  Add the onion, garlic, parsley, and sun-dried tomatoes to the bowl of a food processor.  Pulse until finely chopped then add to the bowl with the milk/breadcrumb mixture.  Also add the egg, ricotta cheese, parmesan cheese, Italian seasoning, and salt.  Mix to combine all ingredients. Add the chicken and mix until just combined – do … Continue reading

Sweet & Tangy Air Fryer Chicken Skewers make for a quick and easy meal.  They are a little sweet from the brown sugar and a little tangy from the cayenne and chili powder, but the combination just works!  Each skewer is packed with juicy, tender chicken that slides right off the skewer.  These are great for a weeknight meal after a busy day, can be served as a side dish or appetizer, and make a great lunch throughout the week.  Serve as is, over a bed of rice, with some cooked veggies or a salad on the side, and you have a complete meal! The recipe can be found here. Start by soaking the wooden skewer for at least 30 minutes.  This helps to prevent the meat from sticking to the skewer while cooking and it prevents the wood from burning.  I like to use 6-inch or 8-inch skewers (that’s what fits inside my air fryer). … Continue reading

Air Fryer Lemon Pepper Chicken Skewers are bursting with fresh lemon flavor, have tons of juicy, tender chicken, are perfectly peppered (try saying that 5 times in a row), and slide right off the skewer.  They are a perfect weeknight meal, make ahead lunch, or appetizer.  Serve over a bed of rice, with some cooked veggies, or a salad and you have a delicious and healthy meal! Cut the chicken into 2-inch pieces and place in a Ziploc bag.  Add salt, pepper, garlic, lemon zest, and olive oil.  Seal and toss to coat the chicken.  I like to use boneless skinless chicken breasts, but you … Continue reading
